Wood Fired Pizza is more than a traveling pizza oven. It is an approach to capture a bit of the past and reveal it in a relevant fashion for today’s customers. A handmade imported Italian oven sits quietly on the back of a 1956 Ford F250 flatbed and produces true artisan pizza. The dough is hand stretched and lightly tossed to the perfect thin crust and topped with sun ripened California tomatoes and a variety of toppings. The mixed burning hardwoods create temperatures over 800 degrees and flavors that can’t be copied. The pizzas flash-bake in the wood fired oven and come out with a crispy crust and melty mozzarella in less than two minutes.
